Apple crumble is a product of wartime rationing. During the Second World War, butter, sugar, and flour were rationed, making traditional pastry unaffordable for many families. The crumble topping — essentially the same ingredients as pastry but mixed differently, requiring less of each — was a clever adaptation that used fewer resources while delivering comparable results. Postwar, the crumble became a staple of British home cooking, valued for its simplicity and forgiving technique.

The crumble technique

The topping is made by rubbing cold butter into flour until the mixture resembles breadcrumbs, then stirring in sugar. Cold butter is essential — warm butter creates a paste rather than the sandy, rubble-like texture that gives crumble its character. Some cooks add oats for texture and nuttiness. The crumble should be applied in an even, loose layer without pressing down — compacting it removes the air and prevents crisping.

The Bramley apple

In Britain, the Bramley apple is the standard crumble filling apple. Bramleys are sharply acidic, almost unpleasant eaten raw, but break down beautifully under heat into a soft, fluffy purée that contrasts with the crisp topping. The sharpness balances the sweet topping. For a firmer filling, dessert apples can be used — they hold their shape better. The filling is seasoned with sugar and optionally cinnamon, cloves, or lemon zest.

Variations

The crumble template extends far beyond apple. Rhubarb crumble is arguably even more popular; blackberry and apple is a classic autumn combination; gooseberry, plum, and pear all work well. Savoury crumbles also exist, using breadcrumbs and cheese over vegetables.
