Black Pudding

A blood sausage made from pig's blood, pork fat, and oatmeal or barley, cooked in a casing until set — a staple of the full English and Scottish breakfast, with a rich, earthy, iron-heavy flavour; the best black puddings (from Bury in Lancashire, Stornoway in the Hebrides, and Clonakilty in Ireland) are considered artisan products of national importance.

Blood sausage tradition

Black pudding is one of the oldest preserved meat products in human history — blood sausages appear in Homer’s Odyssey and in Roman cookery. The technique of mixing blood (which would otherwise quickly spoil) with fat, cereal, and seasoning, then cooking in a casing to set it, is a practical way to use every part of a slaughtered animal. Black pudding production was traditionally tied to pig-killing season in autumn and winter.

British regional varieties

Bury in Lancashire is the most celebrated English black pudding centre — the Bury market has sold black pudding for centuries and the town is home to renowned producers including Chadwicks. Stornoway black pudding, from the Isle of Lewis in the Outer Hebrides, has Protected Geographical Indication (PGI) status — it uses sheep’s blood and oatmeal and has a distinctively loose, crumbly texture. Clonakilty black pudding in County Cork, Ireland, is another PGI-protected variety.

Flavour and cooking

Good black pudding has a complex, richly savoury, slightly metallic flavour from the iron in the blood, balanced by the fat and oatmeal. Frying or grilling creates a crisp, slightly caramelised outer surface while the inside remains soft and yielding. It is most commonly served as part of the full English breakfast alongside bacon, eggs, and sausage, but also appears in salads, starters, and as a component of more ambitious cooking.

Nutritional density

Black pudding is extremely nutritious — a rich source of protein, iron (from the blood), zinc, and B vitamins. Its reputation as an iron-rich food is justified. The high fat content is also notable; it is not a health food in large quantities, but its nutritional density is considerable.
