Kale

Brassica oleracea var. sabellica

A hardy leafy brassica with crinkly or flat dark green leaves, packed with vitamin K and tolerant of cold weather long after other greens have given up.

A pre-cabbage cabbage

Kale is one of the older cultivated forms of Brassica oleracea — closer to the loose-leaf wild ancestor than its tightly-headed cousin cabbage. Greek and Roman gardens grew kale-like greens for centuries; tightly-headed cabbages emerged later through selective breeding.

Frost makes it sweeter

Kale produces and stores sugars as a freeze-protection mechanism — a process called cold-hardening. Cells flood with sugars to lower the freezing point of their cytoplasm and prevent cell-wall damage. The same mechanism makes kale taste noticeably sweeter after the first hard frost. Many small farms hold off on harvesting kale until after a freeze for exactly this reason.

A massage problem

Raw mature kale is fibrous and chewy. Massaging the leaves — drizzling with oil and salt and crushing them by hand for a minute or two — physically breaks down the cell walls, making the texture tender and palatable raw. Without massage, the same salad is unappealing.

Vitamin K and blood thinners

Kale is one of the highest dietary sources of vitamin K (over 600% of the daily value per cup, raw). Vitamin K participates in blood clotting, and people taking warfarin and similar anticoagulants are advised to keep their intake of leafy greens consistent — sudden spikes can interfere with the medication’s dose.

Kale’s brief moment as a luxury food

Kale was a working-class staple for centuries, then largely fell out of fashion in the late 20th century. In the 2010s, a marketing push (and a New York Times trend piece) propelled it into a brief period as a luxury produce — dramatic price increases, bouquet-style packaging, and chef-driven menus. The boom faded, but kale stayed in the rotation.
