Blood Orange

A red-fleshed orange variety from Sicily and Spain — its dramatic red color comes from anthocyanins triggered by cold winter nights, a chemistry trick most citrus regions can't replicate.

The cold-night requirement

Blood oranges develop their famous red color from anthocyanin pigments that only form when nights are cold during ripening. This is why blood oranges achieve their full color only in specific climates — Sicily (especially the slopes of Mount Etna), parts of Spain, and California’s San Joaquin Valley.

In hot tropical climates, the same blood orange variety produces ordinary orange-fleshed fruit. The pigment is essentially a stress response to cold.

Sicily’s protected designation

Three Sicilian blood orange varieties — Tarocco, Moro, and Sanguinello — collectively hold European Protected Geographical Indication (PGI) status as Arancia Rossa di Sicilia. Only fruit grown in specified Sicilian provinces can carry the label.

The volcanic soil of Mount Etna, combined with cold nights and warm days, produces what most chefs and connoisseurs consider the world’s best blood oranges.

A short, vibrant season

Blood orange season is December through April — exactly when most fruit is scarce in the Northern Hemisphere. This timing made blood oranges a vital winter source of vitamin C in Mediterranean Europe long before refrigeration and global trade.

The narrow window is also why imported blood oranges can be expensive: shipped fresh from Sicily to Tokyo or New York, the logistics are tight.

Why bartenders love them

The drama of blood orange flesh transforms cocktails visually. A blood orange Negroni or spritz has a depth of color that ordinary orange juice can’t match, and the slight grapefruit-raspberry edge to the flavor adds complexity.

The popularity of Aperol Spritz and Italian aperitivo culture in the 2010s drove a major increase in blood orange consumption outside Europe.
