A sacred Indian fruit tree — the bael (Bengal quince or stone apple) is one of the most revered plants in Hinduism, its trifoliate leaves used in Shiva worship; the fruit is a hard-shelled sphere the size of a large orange, with dry, orange, aromatic flesh inside that is eaten fresh or made into a beloved Indian drink; dried bael slices are a staple of traditional Ayurvedic medicine.
Sacred significance
The bael is one of the most sacred trees in Hinduism. Its trifoliate leaves — three leaflets on a single stalk — represent the three aspects of Shiva. Bael leaves are offered to Shiva shrines throughout India, and the tree is commonly planted in temple grounds. The Skanda Purana and other sacred texts describe the bael’s spiritual properties. Trees are protected from cutting, and the destruction of a bael tree is considered highly inauspicious.
The fruit’s architecture
The bael fruit is distinctive — a round or oval sphere with a hard, woody shell that does not crack easily. To open it, the fruit is struck against a hard surface or scored with a knife. Inside, the orange flesh is divided into 8–15 sticky, aromatic sections separated by thin walls. The pulp is eaten by scooping from the shell. Fully ripe bael is soft, aromatic, and sweet; underripe fruit is hard, astringent, and used medicinally.
Bael sherbet
The most common culinary use in India is bael ka sharbat — a drink made by mashing the ripe pulp with water and sugar, straining out the seeds and fibres, then serving cold. It is one of the most popular summer drinks across north and central India, sold by street vendors from April to June. The aroma and flavour are distinctive and unlike any other tropical fruit drink.
Ayurvedic medicine
Bael has been used in Ayurvedic and traditional medicine for at least 4,000 years. Unripe bael is astringent and used for diarrhoea and dysentery; ripe bael is laxative. Dried slices of unripe fruit — sold as dried bael or sookha bael — are a common Ayurvedic preparation. Modern pharmacological studies confirm significant antimicrobial and antidiarrhoeal activity in the leaf and fruit extracts.
