A cactus fruit

Dragon fruit (also called pitaya or pitahaya) grows on a sprawling climbing cactus native to Central America. The cactus has long, three-sided green stems that climb walls and trees, producing dramatic large white flowers that bloom for a single night. The flowers are pollinated by bats and moths.

The fruit develops over 30–50 days and is harvested when the skin’s color is fully developed.

The visual is the appeal

Dragon fruit’s astonishing appearance — bright magenta-pink shell, green scales, and white or hot-pink interior — has driven its commercial success. The flavor is fairly subtle: mildly sweet, slightly fragrant, between kiwi and pear. Some varieties (especially yellow-skinned) are notably sweeter.

The visual contrast makes dragon fruit a popular ingredient in smoothie bowls and Instagram food photography — the white-and-black-seeded interior or the deep magenta version photographs dramatically.

Asia adopted, then dominated

Although native to Central America, Vietnam is now the world’s largest producer of dragon fruit. The cactus thrives in tropical Southeast Asia, and Asian consumers have embraced it. Thailand, Indonesia, Taiwan, and the Philippines all produce significant amounts.

How to eat one

Slice in half and scoop out the flesh with a spoon, leaving the skin behind. Or peel the skin away and slice the flesh. The flesh is studded with tiny black seeds — fully edible, slightly crunchy, like kiwi seeds.

Pick fruits that yield slightly to pressure (like a ripe kiwi). Hard, unblemished fruit is underripe; soft, dark fruit is overripe.

A laxative effect

Dragon fruit (especially red-fleshed varieties) contains a high fiber content and can cause temporarily pink urine and stool in heavy eaters — the betalain pigments pass through the digestive system intact. The effect is harmless but can be alarming if unexpected.
