A different mamey from mamey apple
Mamey sapote (Pouteria sapota) is not the same as mamey apple (Mammea americana). Both share the “mamey” name in various Spanish dialects but are different species in different families.
In Mexican Spanish, “mamey” almost always refers to Pouteria sapota — the large football-shaped fruit with salmon-pink flesh. In some Caribbean Spanish, “mamey” refers to Mammea americana. The shared name is a frequent source of recipe confusion.
A milkshake icon
In Mexico, Cuba, and Cuban-American Florida, mamey milkshake (batido de mamey) is a beloved beverage — fresh mamey blended with milk, sugar, and ice into a thick smoothie with rich color and intensely sweet flavor.

A massive seed and dense flesh
A typical mamey sapote weighs 0.5 to 2 kilograms and contains a single huge dark brown seed at the center. The flesh is dense — almost putty-like — and salmon-pink in the most prized varieties, with an intensely sweet, complex flavor.
The pit was traditionally toxic but is the source of sapuyul — a sweet aromatic oil used in Mexican folk cosmetics, especially for hair care.
A long ripening process
Mamey sapote is picked hard and ripens slowly off the tree — sometimes over 1-2 weeks. Hard fruit has zero flavor; properly ripened fruit yields slightly to thumb pressure and has a small wound at the stem end where the latex has dried.
Florida and Mexican farmers have developed sophisticated ripening techniques, including specific fruit-scratch tests, to ship the fruit at the right moment. Specialty markets in Miami and Los Angeles often display mamey sapote with handwritten signs explaining the ripening test.
