Wild Garlic

Allium ursinum

The woodland carpet of spring — wild garlic (*ramsons*) carpets British and European deciduous woodland floors from March to May, filling the air with garlic scent before the tree canopy closes; every part is edible, from the leaves and stems to the white star-shaped flowers; it is the most aromatic of Britain's edible wild plants and is now widely foraged for restaurant kitchens.

Each spring, from about mid-March, damp deciduous woodland floors across Britain transform: the ground turns bright green as wild garlic leaves emerge en masse, covering every surface in a carpet that smells intensely of garlic. The scent is strongest on warm, still mornings. By early May, white star-shaped flowers appear on tall stems; by late May, the leaves yellow and die back entirely until the following spring. This brief window is the forage season.

Foraging and misidentification

Wild garlic is one of Britain’s most popular forage plants, but it requires care — it can be confused with lily of the valley (Convallaria majalis, toxic) and autumn crocus (Colchicum autumnale, extremely toxic) when the leaves are young. The distinguishing check is easy: crush a leaf — genuine wild garlic smells strongly and unmistakably of garlic; the toxic lookalikes do not.

Culinary uses

The most popular preparation is wild garlic pesto: young leaves blended with good olive oil, toasted pine nuts or almonds, Parmesan, and lemon juice. This freezes very well and preserves the fresh spring garlic flavour for months. Wilted leaves can substitute for spinach in most dishes. The flowers make an attractive garnish. Flower buds pickled in white wine vinegar have a milder garlic flavour and keep well.

Forager’s caution

As with all foraging, only harvest from areas not contaminated by pesticides, heavy traffic, or dog fouling. In Britain, foraging is generally legal on common land and footpaths but not on private land without permission. Take only what you need and leave the rest to flower and seed.
