Giant Puffball

Calvatia gigantea

An enormous white spherical mushroom of rich grassland, edible when young and bright white throughout.

Where it grows

The giant puffball fruits from late summer through autumn in rich grassland, around old farmyards, in hedgerows, and at the edges of broadleaf woodland. The same patch typically produces fruitbodies year after year. A single giant puffball can weigh several kilograms.

How to recognise it

A smooth, leathery-skinned white sphere or pear-shape attached to the ground by a thin root-like cord. When sliced through the middle, a young giant puffball is pure white inside, with no trace of cap or stem development — a uniform firm marshmallow texture. As it matures, the interior yellows, then browns, then turns to a dry brown powder of spores.

Edibility & cautions

A choice edible when young and bright white throughout. The critical safety check is always to cut the puffball in half before cooking: if any structure of a developing cap or gills is visible inside, it is not a puffball but an unopened Amanita button — potentially a death cap. A true puffball is uniform white flesh from top to bottom. Once the interior has any yellow or green tinge it is no longer edible.

Culinary use

Slice into thick steaks and pan-fry in butter; the flavour is mild and meringue-soft.
