Bakers mix and shape doughs, proof and bake bread, produce croissants and laminated pastries, decorate cakes, and run dessert and bread programs in restaurants. Many start work overnight to have product ready by morning. Specialty bakers focus on cakes, viennoiserie, or chocolates.
Training path
Many US bakers learn through apprenticeship in production bakeries or attend culinary school baking and pastry programs. Master baker programs from organizations such as the Bread Bakers Guild of America offer continuing development.
