A Mediterranean low woody herb with tiny aromatic leaves used in cooking around the world, also planted as a fragrant flowering ground cover.

Description

Thyme is a small woody shrubby herb with tiny grey-green leaves and short stems crowded with pale pink or lilac flowers in summer. Many species form spreading mats only a few centimetres tall.

Cultivation

Thyme thrives on poor sharp soil with full sun and despises wet feet. Once established it is drought hardy and can carpet paving cracks or path edges with fragrance underfoot.

Uses

A cornerstone of Mediterranean cuisines and herbes de Provence blends, thyme is also a strong source of the antiseptic thymol used in mouthwashes and traditional cough syrups.
